Gyros Veggie Pita with Tzatziki

This is the taste of Greece! When you visit this beautiful country, you will find that gyros or souvlaki pita with tzatziki is sold around every corner and can be called a typical Greek street food. Well, this is of course the vegan version, and I would definitely not call it a fast food. In fact, you need some time to plan ahead and prepare all the ingredients. The result though is so worth the wait!

 


 

 


 

You will need:

 

Ingredients:

  • 3 Tbsp extra virgin olive oil
  • 1 large sweet onion, roughly cut into 1/2 or 1/4 rings
  • 7 oz (200 g) veggie gyros
  • 1 red bell pepper
  • 1 jalapeño pepper (if you like it hot)
  • freshly ground black pepper to taste
  • 1 Tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 3 Tbsp fresh parsley and/or oregano
  • 3 oz (90 g) Kalamata olives
  • 1 tomato, cut into slices or wedges
  • some fresh oregano, if desired

 

Preparation:

Your tzatziki should be prepared, (preferably the day before) and the pita dough rolled out and ready to go into the skillet. Preheat a sauté pan on medium. Sauté the onion in olive oil for about 10 – 15 minutes or until soft. Add veggie gyros and tear it apart into individual pieces. Add bell pepper, jalapeño, and season with black pepper. No additional salt needed, because the gyros is salty enough! Sauté for another 10 minutes. Put pan aside and tend to the pitas as described in recipe. Keep pitas warm in the oven, lowest setting. In a small skillet, quickly sauté minced garlic and herbs in the additional olive oil.  Reheat gyros veggies, put them on pitas, top with tzatziki, close pitas halfway, and spoon garlic herbs with oil on top of pitas. Garnish with tomatoes, olives, and oregano. Enjoy!
