Bake N’ Shape Cookies

These cookies are simply delicious and so easy to make. No worries about run-away cookies on your baking sheet, because you first bake, then shape these little guys. You could even call them healthy, but that highly depends on how many of them you eat. Once you get started, it’s really hard to make the next one the last one. They are scrumptious, cacao-buttery, perfectly sweet….. and totally addictive!

 


 

 

 

 


 

Ingredients:

  • generous 1/2 cup (125 g) coconut oil
  • 3 oz (85 g) raw cacao butter (same as cocoa butter)
  • 8.8 oz (250 g) dried, pitted dates, finely chopped
  • 8.8 oz (250 g) old-fashioned rolled oats (gluten free optional)
  • 1 tsp baking soda
  • 5 Tbsp ground flax seed
  • 1/4 tsp Celtic sea salt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • scant 1/2 cup (110 ml) maple syrup
  • 1 tsp vanilla extract
  • scant 1/2 cup (110 ml) apple sauce

 

Preparation:

Line rimmed baking sheet with parchment paper and preheat oven to 350°F (175°C).

Melt coconut oil and cacao butter (cocoa butter) in double boiler or water bath. Make sure the water doesn’t start boiling.

Finely chop dates.

In a large bowl, combine oats with baking soda, flax seed, salt cinnamon, and turmeric. Add chopped dates, the melted coconut oil/cacao butter blend, maple syrup, vanilla extract, and applesauce. Combine everything very well and distribute evenly on the baking sheet.

Bake for about 13 minutes. The cookie dough should be fragrant by now, but not brown yet.

Let everything cool down for a couple of minutes until the dough is not hot to the touch anymore.  Use your hands to shape them into little balls, and let them cool down completely.

 

Notes:

  • Perfect not just in the holiday season but any time of the year!
  • I kept part of them in the fridge (they didn’t last long, so I don’t know how long they would keep), the rest I froze in ziploc bags in one layer. They are deliciously perfect after 3 weeks and probably will be for even longer.
  • Makes about 35 cookies, but it highly depends on how big you make them. Mine were about walnut size.
