Colorful Guacamole
Oh…..guacamole! What a special love affair I have with you! I tried several different ways to prepare this wonderful creamy Mexican side dish, but this one is my absolute favorite! Enjoy it with Mexican food, on bread, as a dip, or just spoon it out of the bowl! Whatever way you choose, you will love it!
Ingredients:
- 2 big ripe avocados
- 1 TBSP freshly pressed lime or lemon juice
- 1/2 tsp Celtic sea salt (start slow, you can always add more)
- 1 clove garlic, minced
- 1/2 small red or sweet onion finely diced (about 1/2 cup)
- 1 medium size ripe tomato, diced
- 1/2 bunch fresh cilantro (about 3 TBSP, ask your taste buds!)
Preparation:
Cut avocados lengthwise around the pit. Stab the pit (not yourself) with a knife, turn and wiggle it a little bit and remove the pit. Scoop out the creamy pulp, add to a bowl with lemon juice, salt, and minced garlic. Mash using a fork, potato masher, or pestle. Mix in diced onion, tomato, and cilantro. I like guacamole best at room temperature, but that’s up to you! If you have leftovers – I don’t think you will – store in the fridge!
