Energy Balls Going Coconuts
Do you like coconuts? How about macadamia nuts, dates and cranberries? If yes and you need a little energy boost or have a sweet tooth to satisfy, here is a healthy alternative to sugary store bought bars. These little power balls are packed with vitamins, minerals, and fiber. Besides being healthy, they are super easy to make, raw and ready in less than 15 minutes. So yummy that I forgot to count the ones I ate!
Ingredients:
- 1/2 cup raw and unsalted macadamia nuts
- 1/8 tsp Celtic sea salt
- 1/2 cup dried cranberries
- 12 dried Medjool dates, pitted
- 1/2 cup shredded coconut plus some more for tossing
Preparation:
Coarsely chop the macadamias. I used the chopping tool of my hand blender. Make sure they don’t become nut meal, because you want the texture. Toss them into a bowl with the salt. Do the same with the cranberries or leave them whole, whatever you prefer. Add to bowl, then throw dates into the blender. This time, blend until the dates are completely pureed, then add to bowl with the coconut shreds. Use your hands to form a sticky dough. Roll bite size pieces into little balls and toss in the extra coconut shreds. I had approximately 15 of those bites rolled up. I know, I should have counted before devouring them. Soooo gooood!!!!!

- best chilled right out of the fridge
- try chopped dried apricots instead of cranberries as a variation
