Strawberry Smoothies Gone Nuts
I tend to buy fresh strawberries only when they are in season. They just taste better, and in many stores the organic version is not even available in winter. Thank goodness for the freezer department where strawberries are in season year-round. If you have kids, surprise them with a freshly made smoothie after school once in a while! It’s the perfect afternoon pick-me-up that boosts your energy for the rest of the day. Deliciously nutritious with even 2 versions, because I couldn’t make up my mind which one I liked better. Ready in less than 5 minutes!
version 1 with vegan yogurt
For both versions you will need:
- Good blender or food processor (needs to be able to crush ice cubes!)
Ingredients:
(Version 1)
- 1 banana
- 1 oz raw unsalted cashews
- one 10 oz (284 g) bag frozen strawberries
- 5 pitted dried Medjool dates
- 1 cup (240 ml) ice cubes
- 1 cup (240 ml) vegan yogurt, homemade or store-bought
Preparation:
Put all the ingredients, except yogurt, into your blender and process on high speed for 1-2 minutes until you have the perfect consistency. Use your tamper to push everything down to the blades. You can either add yogurt now and blend a few more seconds or, that’s what I did, pour the smoothie into glasses and swirl in yogurt. It tastes the same, I just like how it looks.
version 2 without vegan yogurt
Ingredients:
(Version 2)
- 1 banana
- 1 oz (30 g) raw unsalted cashews
- one 10 oz (284 g) bag frozen strawberries
- 5-8 pitted dried Medjool dates (depending on how sweet you like it)
- 1 cup (240 ml) ice cubes
- scant 1/2 cup filtered water
Preparation:
Put all the ingredients into your blender and process on high speed for 1-2 minutes until you have the perfect consistency. Use your tamper to push everything down to the blades.
