Thick And Creamy Tomato Sauce

This will be the quickest, easiest, and definitely one of the most delicious tomato sauces you’ve ever made. Ready in less than 10 minutes, no tomato dicing involved, and so flavorful! Since it’s very smooth, this is the sauce kids will love too. It is perfect with any kind of pasta, roasted vegetables, and even as a dipping sauce.

 


 

 

 

 


 

You will need:

  • high speed blender

 

Remember to soak cashews!

 

Ingredients:

  • generous 1/2 cup (70 g) raw, unsalted cashews, soaked in sufficient filtered water overnight or for at least 4 hours, drained
  • 2 lb (900 g) tomatoes
  • 3 cloves garlic (I don’t even peel it)
  • 2 generous Tbsp nutritional yeast
  • 2 Tbsp extra virgin olive oil
  • 1 tsp Celtic sea salt
  • 1.8 oz (50 g) pitted, dried dates
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 – 1 1/2 tsp crushed red pepper (optional but so good, if you like it a little spicy)

Toppings:

  • minced fresh parsley
  • fresh Italian herbs like thyme, basil, oregano, rosemary (optional)

 

Preparation:

Rinse tomatoes and garlic. Place all the ingredients, except for the toppings, into your high speed blender and blend at high speed for about 5 minutes or until steamy hot and very creamy. No need for a saucepan. Pour/scrape into a serving dish and garnish with fresh herbs. Enjoy!

 

Notes:

  • If you ever forget to soak your cashews, you can quick-soak them in boiling water. Place cashews into a saucepan, add sufficient filtered water, bring to a boil, then turn off heat, and let sit for 1/2 – 1 hour. Soaking nuts makes them more digestible and their nutrients better available for your body. Always make sure to use filtered water!
  • As mentioned before, this sauce goes well with roasted veggies, casseroles, and of course with your favorite pasta.
  • If you serve this sauce to kids or are sensitive to spicy food, omit the crushed red pepper or use less of it!
