Apple Ginger Pancakes

Pancakes! Doesn’t that sound like weekend mornings? If you like to change things up a little from time to time, here’s a perfect way to upgrade your good old pancakes without too much additional work. Spicy ginger gives this recipe some zest while the apple adds delicious tartness. Ingredients: (for about 20 4 inch/10 cm pancakes)

  • 2 cups (260 g) all purpose einkorn flour
  • 2 tsp cinnamon
  • 4 tsp baking powder
  • ½ tsp Celtic sea salt
  • 1½ cups (350 ml) unsweetened soy milk (or plant-based milk of your choice)
  • 2½ Tbsp maple syrup
  • 3 Tbsp virgin coconut oil (melted)
  • 1 tsp pure vanilla extract
  • 3 tsp fresh ginger, grated (or more, if you like)
  • 1 apple, cored, cut into wedges, then sliced (I don’t peel it, but that’s up to you)
  • virgin coconut oil for frying

 

Preparation:

Prepare apple and ginger and set aside.

Combine flour, cinnamon, baking powder, and salt in a large bowl.

Use a separate large bowl to combine the soy milk, maple syrup, melted coconut oil, vanilla extract, and grated ginger.

Add the wet ingredients to the dry ingredients and blend gently with a wooden spoon until the flower mix is incorporated. Fold in apple and ginger.

Set your oven to 200°F (90°C)

You can either use a skillet or a griddle to fry your pancakes. Set the griddle to 375°F (190°C), skillet on medium high heat. Wait until hot, then coat with some coconut oil.

Spoon the batter onto griddle or into skillet and flatten into small pancake size. Fry until small bubbles appear and start bursting, ….

 

 

…. then flip them over.

This takes about 3-4 minutes. Fry on other side until golden brown, about another 3 minutes.

 

 

Put the pancakes on an oven safe plate and keep warm in the preheated oven. Repeat until all batter is used.

Enjoy with your favorite topping!

 

Notes:

  • You can serve these pancakes, as always, with maple syrup or maybe some fruit for the healthy touch. Berries are my favorite.
  • They taste absolutely amazing with caramelized apples or – here comes my other favorite – with apple butter and vegan yogurt.
  • If you decide to use regular flour, you will need at least 1/3 cup (80 ml) more plant milk.
  • Swap the apple for a pear, and you’ll love it too!
