Key Lime Smoothie With A Gingery Twist

Green smoothies always give me those healthy, energizing vibes? I love their vibrant color combined with this clean, fresh taste that is simply delicious and nutritious. Since I’m a fan of creamy texture, I added some soaked cashews which also mellowed the limes’ tartness. This smoothie really reminded me of key lime pie with a little gingery twist, hence the name. A perfect start into the day or a delicious pick-me-up any time!

 


 

 


 

Remember to soak cashews!

 

You will need:

  • a high speed blender

 

Ingredients for 2 large smoothies:

  • generous 1/4 cup (35 g) cashews, soaked in sufficient filtered water for at least 4 hours or overnight, drained
  • 2 large kale leaves, thick part of the stems removed
  • 1 1/2 inch (4 cm) piece fresh ginger
  • juice of 2 limes (4 Tbsp)
  • 1 apple, quartered and cored
  • 1/4 tsp Celtic sea salt
  • 1 1/2 tsp maca powder (optional)
  • 6-9 dried, pitted dates (depending on how sweet you like it)
  • 4 Tbsp coconut flakes
  • 3 cups ice cubes

(optional for garnish):

  • coconut flakes
  • kale
  • lime slices

 

Preparation:

Place all the ingredients into your high speed blender and blend at full speed until very smooth and creamy. Use the tamper to push everything down towards the blades. Pour smoothie into glasses and garnish with coconut flakes, some kale, and lime slices. Enjoy!

 

Notes:

  • If you’re not a fan of ginger, you can just omit it!
  • You can either use lacinato- or curly kale. I used both with the same result.
