Probiotic Vegan Strawberry Yogurt

This vegan yogurt is the perfect, gut healthy snack for your little cravings in between meals, a wonderful breakfast addition, or even a delicious dessert. It is heavenly creamy, fruity, not too sweet, and has just the right amount of tartness. I usually make double batches because it’s that good and usually gone way too fast.

 


 

 

 

 


 

You will need:

  • a high speed blender
  • some patience

 

Ingredients ( for about 4 servings):

For the yogurt base:

  • 1 cup unsalted raw cashews, soaked in sufficient filtered water overnight
  • 3/4 cup filtered water
  • 3 probiotic capsules (I used ‘Renew Life’/ Ultimate Flora/ 50 Billion Live Cultures)

For the fruit:

  • generous 12 oz (350 g) fresh strawberries, washed, greens removed
  • 10 pitted, dried dates
  • maple syrup to taste, if necessary

For garnish:

  • more strawberries
  • grated zest of 1 thoroughly washed lime
  • coconut flakes
  • lemon balm leaves

 

Preparation:

Drain the water you soaked the cashews in, rinse, and drain again. Put cashews and filtered water in your blender and blend on high speed until the cashew cream is thickened and steamy (about 3- 4 minutes, but it really depends on your blender). Pour and scrape the cream into a glass- or ceramic bowl and let cool down at room temperature. For the following, use either a plastic or wooden spoon. Open the probiotic capsules and thoroughly blend the powder with your cashew cream. Cover with a clean kitchen towel or cheese cloth and secure with a rubber band. Let the mixture sit at room temperature for 1-2 days. After one day it’s very mild, on the second day it tastes stronger. I prefer the 2 day wait.

Your yogurt will be rather thick which is perfect for adding pureed fruit. Once it has your preferred tartness, place strawberries and dates into your blender.

If you like some fruit pieces in your yogurt, put 1 or 2 strawberries aside and dice them.

Process strawberries and dates until very smooth and saucy.

Now you can either arrange everything in serving bowls or in one larger bowl. Add fruit puree (and optional pieces) to your yogurt base and stir until well combined or make fruit swirls.

Chill covered in the fridge for at least 2 hours. Add garnish right before serving or enjoy as is!

 

Notes:

  • The lime zest really gives this yogurt a special, fresh note. If you don’t want to garnish, just stir it into the yogurt with the fruit puree.
  • Alternatives for strawberries are, blueberries, raspberries, peaches, apricots, mango.
